i think the issue with Ramsay is that he relished the brutality of war, and so his death was actually rather apropos, given that he gets savagely mauled by jon and then slowly torn to shreds by dogs. you could see even when jon was coming at him (ramsay) that he sort of knew that his own brutality towards others was always going to inevitably come back to him.
ramsay was, in a weird way, pursuing his own self-demise. you can really sense it when he starts mouthing off the word "b*stard" to jon, as if he wanted him to share in his self-hatred.
he was basically saying, "who can stop me now? who can challenge my cruelty?" and in doing so, he almost excitedly anticipated a challenger that could finally end his own stupor of misery

I thought the way he went out was fitting.
Would have liked it better if they added more a human side to his character though. Its satisfying to see him go but I would have enjoyed the episode more as a whole if I was emotionally invested in both sides, and in almost every battle to this point had been like that.
Standout scene from this episode was the interaction between Asha Greyjoy and Daenerys though. The dialogue was so sharp!
